Rippenknochen

The "cage" refers to the rib cage of the bird, and as the recipe uses "bone" in the singular, I would imagine that this is only one bone from the rib cage (logically the one nearest the top of the thigh). Leaving this on provides a wider and slightly meatier top to the leg.

I opened the package and discovered that a “leg quarter” did not end at the thigh, but appeared to include part of the chicken rib cage.

Kann es sein, dass es sich hier um einen Teil des Brustkorbes handelt, also etwa, wenn das Huhn geviertelt verkauft wird (leg quarter with backbone, siehe http://www.bbq-brethren.com/forum/showthread.php?t=103426)
