For those PDF files generated from faxed documents, I don't think they can be converted into any other format. I would like to know if they can.
PDF files from faxed document can be converted into word via OCR programs.
OCR programs do not always support all languages, i.e. characters, but they are of great help! I am currently using the OCR from Adobe Acrobat, it is doing great job with Greek and Romanian special characters. Of course the word documents need some more formatting after being scanned with OCR, especially when PDF files are not so clear, but it is anyway better than typing
