For the purpose of this paper, seafood includes both finfish, shellfish and cephalopods (octopus, squid). The term shellfish covers the bivalve molluscan shellfish (oysters, cockles, clams and mussels), the gastropods (periwinkles, sea-snails) and the crustacean shellfish (crab, lobster, shrimp).

Όπως φαίνεται στη σύγχρονη ορολογία του FAO, ο όρος (bivalve) molluscan shellfish χρησιμοποιείται αντί του bivalve mollusks/molluscs.
Shellfish είναι ο όρος-ομπρέλα, και χωρίζονται σε δίθυρα μαλάκια (μύδια, στρείδια, αχιβάδες), γαστερόποδα (gastropods, τα σαλιγκάρια) και μαλακόστρακα (crustaceans, καβούρια, γαρίδες).
Παρότι στην ΕΕ το αποδίδουν σκέτο "μαλάκια" στο παραπάνω παράδειγμα, το πιο σωστό, και σύμφωνο με παλαιότερες αναφορές, είναι "δίθυρα μαλάκια".
